Simple tip for y'all this week. If you're kitchens already a mess, why not make the most of it? I was making a batch of enchiladas (for when we're at the beach) today and decided to just keep going. They freeze beautifully and I had already dirtied all of the measuring cups and spoons. Why not make extra pans for a rainy day instead of just one batch?
